It is the whole experience of staying in a historical building which used to be a monastery. The rooms, beds, ceiling, floors - everything is old style but with the comfort of a five start hotel. The rooms are very spacious, high ceilings and very helpful staff.
The food options at the bar can be improved. It's not a deal breaker but a suggestion for improvement.

I arriver on foot because I’m a pilgrim on Santiago way. The man at the reception in the evening was quite unplaisant, he continue doing is texting on his phone while I was asking questions, probably he didn’t like pilgrims. The rest of the staff was fine, professional and helpful as expected in a 4 stars hotel. Food at the restaurant was amazing. The building is a fantastically perserved convent from medieval times.

How they repurposed the monetary for accommodations Background music on entering premises
Walking in with a backpack met with less than acceptable meeting with staff member who appeared to hate his job and me, a disshelved backpacker doing the Camino. Higher end hotel in this area but I had reservations. My Spanish was not good as I tried to communicate but this fellow was not helpful at all. Stuck up The remainder of staff were wonderful

Fantastic place to stay and experience a true piece of history and art. I had a room with 2 beds, a private bath with a bathtub (great for sore Camino legs), and access to good food in their onsite restaurant and bar. The dinner I shared with some friends was very expensive, and I thought it was worth it. I had a lunch and wine in the glass sunroom bar attached to the hotel, which was also very good. I also toured the monastery crypt and museum and hotel property (filled with art) by myself (somehow I got through a door left open), though I think normally one books a tour? As a bonus, San Zoilo sits at the exit of the town, right on the Camino. This was a (well-deserved) treat on the Camino de Santiago.
I can't think of anything unpleasant. Since the monastery is located on the edge of town, it is about a 10-minute walk into the center of Carrion de los Condes, which is nothing to a Camino pilgrim.

This hotel is in a fabulous former monastery which hotel guests are given the opportunity to visit from within the hotel (it's also open to the public). In a quiet country location, although easy to find and not too far from the main motorway system. It has a large free car park with ample car spaces. Check-in was quick and easy with the helpful staff who also booked us into the restaurant for dinner. The room was a little small but given the age of the building and it's former use, it was more than adequate - our room looked out on to the monastery quadrangle. Restaurant has a menu with dishes typical of the region and very friendly staff. Breakfast is served in a separate building from the main hotel, which has more of a cafeteria feel to it. It's worth noting that a lot of the guests are 'one nighters' who are walking the Camino to Santiago de Compostela.
Breakfast choices were adequate but not exceptional and we found it to be quiet expensive for what there was.

I loved the beauty and history of the place. The bedroom had the most stunning trees and view outside the window. It was very relaxed, comfortable and an absolute pleasure to stay in such a stunning historic monastery. I would definitely stay again without a doubt.
It was way too hot. The heating was very high and I couldn't turn it down (although I didnt ask for help. I'm sure someone would have sorted it if I'd actually asked). And, the breakfast seemed quite expensive for what it is. However, these aren't big negatives as I would 100% stay again.

Heritage architecture and interior designs, beautiful inside and out; guests can visit the monastery, which is worthwhile; 3-star hotel price for a ‘parador’ like experience!
Entrance to hotel is difficult to find; more prominent signage is required. Location is not close to the shops and eateries. If you are arriving on foot, you should eat and do your shopping before heading to the hotel. There is a restaurant at the hotel but vegetarian options are limited and quality of the food so-so.

The restaurant is superb with attentive, professional staff; the rooms are all stylish and part of the historic fabric of the building. The breakfast buffet was good. The rooms at the hotel are very pleasant and well-equipped. This hotel is used by travellers on the Camino, so there are customers of all types and nationalities. It is also in an ideal position less than two hours from the port of Santander.
The bathroom is beginning to look its age, with the shower over the bath, but overall it was clean and well-equipped.

Lovely and impressive restoration of a historic monastery. Really well done and authentic. Wonderful to see the old cloisters and the way the hotel has so tastefully and sensitively used the property for tourist use. A wonderful and meaningful stop for anyone walking the Camino Frances.
Some of the staff were not as friendly as one would expect, especially given the importance of Camino tourists to the hotel and town. We were told the dining room was full the evening we were there, but we found out later that people were being given tables as they arrived without reservations. We made do with tapas and sandwiches in the bar.

This converted monastery is in a quiet historic town that is easy to walk around. The hotel was clean and the food excellent. I thoroughly recommend the "day old" lamb for two. Breakfast was adequate with a cooked and cold choice of meats, cheese, fresh fruit, pasteries and cereal.
The staff varied from delightful, helpful and well-mannered to a few staff that were surly, brusque and some might even say rude. Phoning the hotel can be challenge when in the late evening you might not even get an answer after the phone ringing out for more than 3 minutes. My wife and I got the impression that the hotel lacked leadership and quality management with front line staff doing their best most of the time but demoralised at other times.
