Absolutely stunning location, the views are incredible, especially if you have a room or apartment with views over the hills (and pool). The staff at the hotel were lovely too. Food at the restaurant was superb, loved it! And the setting of the restaurant with views over the hills is beautiful.
On occasion we waited a little too long for service at breakfast, so perhaps an extra pair of hands to help at breakfast would have helped. The set up in the rooms is also quite spartan. From an aesthetic point of view no complaints, but a chest of drawers would have been useful for clothes (especially as we were there with young children).

Pretty much everything. We booked here for the exceptional views, they didn't disappoint and you could barely hear a sound other than the sounds of nature. Our 1 bed terrace apartment was lovely, very large and well appointed with a dishwasher and Nespresso maker. The large terrace had the same stunning views. The pool was a good size and temperature, there was never a shortage of sunbeds. The restaurant provided a superb breakfast every day, and the other meals we had there were delicious. All the staff we encountered were very well trained and friendly. Paul the Manager was a very hands on presence, a lot of managers could learn from his customer service skills.
There was an issue with lack of sunshades, particularly at the restaurant. Most customers wanted to sit outside on the terrace for the stunning views but there were no sunshades. These were needed even at breakfast in the June/July heat. Bizarrely there were sunshades provided on the unused terrace on the opposite side, a swap would be a good idea. We had a similar problem on our South facing terrace, maybe a roll away shade could be added here?

The staff’s hospitality is unparalleled, making us feel like treasured guests from the moment we arrived. Every detail was handled with warmth and precision, ensuring a flawless stay. The restaurant is a culinary gem! Dishes crafted from fresh, local ingredients burst with authentic Umbrian flavors. Dining on the terrace with stunning views was pure magic. The Thursday BBQ is a must-experience! Grilled local specialties paired with Sagrantino wines under a starry sky created a warm, festive vibe in Saragano’s picturesque streets. The rooms are exquisite—elegant, immaculate, and cozy, with jaw-dropping views. The hillside pool and spa are heavenly, perfect for ultimate relaxation. Visiting nearby vineyards is highly recommended! Guided tours through the wineries and their historic cellars, paired with tastings of exceptional local wines like Sagrantino, elevated our trip to another level.

Aethos Saragano is beautifully and sensitively integrated into the village - because it has mostly been created *from* the village. The view of the village from our room in the new building (which v handily contained the spa) was superb, as was our expansive and long view out over the countryside. The spa is quite small but perfectly formed, and the hotel limits use of the spa to only a few couples at a time - indeed on our visit we had it to ourselves. The restaurant is, again, quite small but absolutely priorities hotel guests over non-residents - allowing us to sample the delicious local cuisine as conjured up and cooked by Delphine - a girl from the village who understands what makes good local food rather magnificent - there is no need to go elsewhere to eat as many come from outside *to* the hotel to dine. Its location requires a car to get around as it is isolated, one reason we chose and enjoyed it, though not far from local villages they are not really easily walkable. Finally - the staff - led by Paul the manager. We felt that he and all of his team could not do enough for us..they treated us like house guests - they were superb.
We very much enjoyed the continental breakfast, but it was basically the same every morning, and though we could add a bit of variety (such as scrambled eggs) if we so chose, the hotel charged for these little extras, and we felt that that was perhaps a little unnecessary given what we were paying for the stay. Perhaps a bit petty and minor, but being pushed to find *anything* about our stay we found less than 10/10 - that’s all we could come up with, but really it didn’t cause us any real concern.

The style of hotel is unique with it being spread out within the village. The staff are outstanding, Paul makes everyone feel so welcome and it's obvious that he has a great rapport with the staff. The restaurant was one of our favourites in Italy and I wish we had stayed longer so we could have tried more of the food. We did the cooking class which was a lot of fun and Delfina is so passionate about her food - it's obvious why the restaurant is so good. On our last night we had dinner at the poolside BBQ which was amazing. It was one long table and we were able to eat with the other guests who we'd had the occasional chat with during our stay, but this dinner really allowed us to connect further - so fun! We spent a lot of time by the beautiful pool relaxing which is just what we needed at the end of a busy holiday exploring other parts of Italy.

Staying here is like a fairy tale. The location is so small and beautiful and yet extremely luxurious and spacious. This is because you can look away at small villages that have been built in the distance and beautiful fields and beautiful areas of greenery in between. The team consists of a very good kitchen, very friendly service and cleaning and of course Paul the manager. All of them busy taking care of the travelers and is extremely helpful. Points of improvement? ZERO! Thank you for this wonderful week!
a set of new pans and cleaning products in the kitchen would be great. And a manual on how the washing machine, oven and dishwasher work. But its just a small thing...

Stunning location. Magical views. Rooms spotlessly clean and contemporary and stylish. We LOVED that there was no TV in our room… the vibes at Aethos encouraged you to slow down and relax, which is what we needed. The staff were faultless. Friendly, kind, approachable, nothing was too much trouble. The staff always wanted to help us when needed. The restaurant was so special. Eating on the terrace, the views, the thunder behind my partners head! Like a fairytale.
It’s not that we didn’t like this, we feel there could be a small bar/ snack bar down by the pool. Every part of the hotel was so well thought out, however we felt the room where you get your drinks from the little fridge could be elevated to match the aesthetic of the rest of the hotel.

A beautiful place to relax and unwind in the middle of the Umbrian nature. Staff is very friendly and shows you around. If you get an Appartement you are allowed to cook and bring your own food what we did one evening since the staff in the restaurant is a bit uncoordinated. The Restaurant is beautiful and food amazing with local products and delicious dishes. Our Appartement had a huge terrace with sun beds and a big table to relax. Linen and the Beds was amazing.

From the moment we arrived, we were blown away by the incredible hospitality. The staff were so sweet and welcoming, and the food at the restaurant was absolutely delicious! A massive shout-out to Paul, who went above and beyond to make our anniversary stay unforgettable. What he did for us was truly special, and we won’t forget it—he’s an absolute star! Highly recommend this place to anyone looking for a memorable and heartwarming experience.
